Sweden’s Ode to Summer

This is my painted summer hat of a Swedish Lusthus – a Gazebo Hat with a wide brim. In Sweden people will gather for a leisurely dinner in a romantic Lusthus set in a meadow of beautiful poppies. Crayfish are cooked in water with dill and spices and served cold. By custom there is one icy cold shot of schnapps – vodka or aquavit – for each shellfish. Toast after toast is made until the platter is bare. A cooling breeze wafts the scent of pine and wildflowers through the Lusthus as the diners watch the setting sun. Ah, the summer at its best.
